Cocktail du Mois: Burnt Mandarin Negroni by Swans Bar

The traditional orange component of the cocktail gets a brilliant upgrade with the mandarin's distinctive sweetness.

The Burnt Mandarin Negroni embodies the evolution of mixology, reimagining a cherished classic through creative innovation and meticulous technique. Created and refined at Swans Bar under the expertise of master mixologist Gabor Onufer, this interpretation shows how original recipes can inspire groundbreaking creativity. "Every bartender has [their] own take on a Negroni, and I had made a version with Mandarin liqueur and smokey Scotch back in 2020," Onufer says. "To make it more on brand [with Assouline] and reminiscent of France, I tweaked the recipe by adding a little Pineau des Charentes…resulting in a fruitier and lighter base that also balances the robust notes of the scotch." To preserve the mandarin's essence, Onufer flambées a mandarin peel, allowing the oils to infuse into the cocktail and create rich caramelized undertones.

Now one of Swans Bar's signature offerings, the drink's popularity has been so remarkable that establishments around the city have begun crafting their own interpretations of the Burnt Mandarin Negroni.

Burnt Mandarin Negroni

Ingredients

  • 30ml Boatyard Double Gin
  • 30ml Campari
  • 20ml Cocchi Storico Vermouth di Torino
  • 10ml Pineau des Charentes Rouge
  • 5ml Burnt Mandarin Liqueur 

Directions 

  1. Flambé mandarin skin with some Smoky Scot Islay Single Malt Scotch, let it infuse for the day
  2. Strain and then mix it with Mandarine Napoléon
  3. Stir over cubed ice & strain over a large block of ice in a rocks glass

Garnish: Flambéed candied mandarin strips perfumed with Santa Bianca Mandarino Verde spray.
